I like the title and gesture from the woman. I assume this is in reference to the man sitting on the stool. It is not totally clear to me. It would have been nice if he was looking at her.
AT - Yes in Canada we just call it bacon (or back bacon). We also have peameal bacon which could be referred to as Canadian bacon as well.
