This it the second WordPress blog I've seen recently and while they tend to be very pretty I can't figure out how to subscribe to them!?

If you have a wordpress ID or blog, you'll see a subscribe button on the toolbar at the top of the page. If you don't I have a subscribe button on the bottom of the blog, sort of in the middle that will send you emails when I post.
