I use the Canon EOS Rebel XSi so I have a good idea what the camera is capable of producing and I can give you pointers now that I know what you are using.

The software can be complex but you don't have to learn how to use everything at once. I think if you could learn a few basics with photo editing and composition you may find you have some amazing results.
The best way I think to do this is to pick one photo and then we can discuss it in detail with suggestions. And if you are up for it, possibly others could take a crack at doing a little editing to show you what's possible from the raw image.
And definitely don't feel bad that you've never done any editing. Everyone has to start somewhere.
