I like dandelions. they are so bright and cheery. I love to see a field of them.
my horse likes them too-but because he thinks that they are tasty. :D

As for the dandelions in salads, we eat them all the time. They are a little bitter, yet very flavourful, and so full of nutrients. They have more betacarotine than carrots, and more iron and calcium than spinach.
WARNING: Only pick before flowering, as they get VERY bitter after flowering.
I believe that they are in the mixed green salads, aren't they? At least that's what I think I'm eating. :):shrug:
