I recently went in to Watson's Foto to print a couple 8'x10's. The original was 2023x1932 in dimensions. When the prints came out, about a 1/2 inch or more was cropped off the sides of the shots. This ended up chopping one persons face in half! The lady said that's normal, that the machines always knock the edges off, because of camera distortion or something. Is this normal? Is there a way to avoid this in the future?

Your problem here is format. Digital photography is generally 3 by 2, 6 by 4, or 12 by 8 for a NO CROP print. An 8 by 10 print means that 2 inches are cropped off what you see and the crop can be very arbitrarily done by the place where you take them to.
The answer is to use your photo editor to resize your photo to 8 by 10. Then you make the decision as to cropping rather than the lab.
